  • 2 pounds fresh mussels
  • 1 can (13.5 oz) coconut milk
  • 1 lemongrass stalk
  • 1 inch piece fresh ginger

  • 1 red chili
  • 1 lime
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • 1 small bunch fresh cilantro
  • 1 loaf (for serving) optional crusty bread

Directions

Step 1

Clean the mussels by scrubbing the shells under cold water. Remove the beard (the stringy part) if present. Discard any mussels with broken shells or that don’t close when tapped. Set aside.

Prepare the aromatics: Peel and finely mince the garlic and shallot. Peel and finely slice the ginger. Thinly slice the red chili and crush the lemongrass stalk slightly with the back of a knife to release its flavor.
