Ingredients

  • 1 cup Green or brown lentils
  • 3 cups Water
  • 1 large pinch Saffron threads
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the lentils thoroughly under cold running water to remove any debris. Set them aside.

Step 2

In a small bowl, add the saffron threads to two tablespoons of warm water. Allow them to steep for at least five minutes to release their flavor and color.

In a medium-sized pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Add the rinsed lentils to the pot and stir to coat them with the garlic-olive oil mixture.
