Ingredients

  • 3 whole leeks
  • 200 grams fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon lemon juice

  • 0.25 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Thoroughly clean the leeks by cutting off the dark green tops and root ends. Slice the remaining white and pale green parts into thin rounds and rinse under cold water to remove any grit.

Wash the spinach leaves under cold running water and set them aside to drain.

Step 3

Mince the garlic cloves finely and set aside.

Step 4

In a large steaming setup (either a steamer basket or a colander over a pot of boiling water), add the sliced leeks. Cover and steam for about 8-10 minutes, or until the leeks are tender and slightly translucent.
