Prepare your steaming setup: fill a wok or large pot with about 1 inch of water, place a steaming rack inside, and bring the water to a boil.
Rinse the fish fillets under cold water and pat them dry with paper towels. Season both sides of the fish with salt and black pepper.
In a heatproof plate or shallow dish that fits inside your steamer, arrange the fish fillets in a single layer. Scatter the sliced ginger and shiitake mushrooms evenly over the top of the fish.
