Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 2 medium tomatoes
  • 3 cloves garlic cloves
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Rinse the brown rice under cold running water until the water runs clear. Drain and set aside.

In a medium saucepan, bring 2 cups of water to a boil over medium heat. Add the rinsed brown rice and 1/2 teaspoon of salt, then reduce heat to low. Cover the saucepan and allow the rice to cook for about 35-40 minutes or until tender and all the water is absorbed.

While the rice cooks, dice the tomatoes into small chunks and finely mince the garlic cloves.
