Ingredients

  • 2 large artichokes
  • 1 lemon
  • 2 garlic cloves
  • 0.333 cup mayonnaise
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 cups water

Directions

Step 1

Trim the artichokes by cutting off the top inch of each artichoke with a sharp knife and trimming the stem so that they can stand upright. Use kitchen scissors to snip off the sharp tips of the outer leaves.

Step 2

Rub the cut edges of the artichokes with the lemon to prevent browning. Cut the lemon in half and set half aside for steaming.

Step 3

In a large pot with a steamer basket, bring 2 cups of water to a boil. Squeeze the juice of the reserved lemon half into the water and place the lemon rind in the pot for added flavor.

Place the artichokes stem-side down in the steamer basket. Cover the pot with a lid and reduce the heat to medium. Allow the artichokes to steam for 25-30 minutes or until the leaves can be easily pulled off.
