Ingredients

  • 4 whole Artichokes
  • 1 whole Lemon
  • 1 head Garlic
  • 2 tablespoons Olive oil
  • 1 cup Mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Trim the artichokes by cutting off the top inch of each one and trimming the tips of the leaves with scissors. Cut off the stem so the artichoke can sit upright. Rub the cut ends with a halved lemon to prevent browning.

Step 2

Fill a large pot with about 2 inches of water and place a steamer basket inside. Squeeze the juice of the lemon into the water. Bring the water to a boil.

Step 3

Place the artichokes stem-side down in the steamer basket. Cover and reduce the heat to a simmer. Steam the artichokes for 30-40 minutes, or until a leaf easily pulls away and the heart is tender when pierced with a knife.

Meanwhile, preheat your oven to 400°F (200°C).

Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap tightly in aluminum foil. Roast in the oven for 30-35 minutes, or until the garlic is soft and golden.

Remove the roasted garlic from the oven and let it cool until it's safe to handle. Squeeze the roasted garlic cloves out of their skins into a small bowl.

Step 7

In a mixing bowl, whisk together the roasted garlic, mayonnaise, Dijon mustard, the remaining 1 tablespoon of olive oil, salt, and black pepper until smooth. Taste and adjust seasoning if needed.

Serve the steamed artichokes warm with the roasted garlic dipping sauce on the side.
