Ingredients

  • 2 Large fresh artichokes
  • 1 teaspoon Salt
  • 2 cups Water
  • 4 tablespoons Unsalted butter
  • 1 Lemon
  • 1 Garlic clove
  • 1 tablespoon Fresh parsley

Directions

Step 1

Fill a large pot with about 2 inches of water and add 1 teaspoon of salt. Bring the water to a simmer over medium heat.

Step 2

Prepare the artichokes by trimming the stem to leave about 1 inch, removing the outer tough leaves, and cutting off the top inch of the artichoke. Use kitchen shears to trim the sharp tips of the remaining leaves.

Step 3

Halve the lemon and rub it over the cut surfaces of the artichokes to prevent browning.

Step 4

Place a steaming basket or rack over the simmering water in the pot. Arrange the prepared artichokes in the basket, facing upwards.

Cover the pot with a tight-fitting lid and steam the artichokes for about 35-40 minutes, or until the leaves can be easily pulled off and the heart is tender when pierced with a knife.

While the artichokes are steaming, prepare the lemon butter sauce. Melt 4 tablespoons of butter in a small saucepan over low heat.
