Take the ribeye steaks out of the refrigerator 30 minutes beforehand to allow them to come to room temperature.
Season both sides of the steaks generously with salt and black pepper.
Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
Once the oil is hot, place the steaks into the skillet. Sear for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your desired doneness.
Remove the steaks from the skillet and set them aside, tenting loosely with foil to keep warm.
In the same skillet, lower the heat to medium and add 1 tablespoon of unsalted butter along with the minced shallots and garlic. Sauté for 2-3 minutes until softened and fragrant.
Pour in the red wine and use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the wine simmer for 2-3 minutes until it reduces slightly.
