Take the ribeye steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature.
Season both sides of the steaks evenly with salt and black pepper.
Heat a large skillet or cast-iron pan over medium-high heat. Once the pan is hot, add the olive oil.
