Ingredients

  • 2 pieces beef sirloin steaks
  • 300 grams haggis
  • 25 grams unsalted butter
  • 1 tablespoon vegetable oil
  • 50 milliliters whisky
  • 200 milliliters double cream
  • 100 milliliters beef stock
  • 1 teaspoon Dijon mustard
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Season the sirloin steaks on both sides with a pinch of salt and black pepper.

Step 2

In a frying pan, heat the vegetable oil over medium-high heat. Add the steaks and cook for 3-4 minutes on each side for medium-rare, or longer depending on your desired doneness.

Remove the steaks from the pan and set aside, covering them loosely with foil to rest.

In the same pan, add the haggis. Cook over medium heat, breaking it up with a spatula, until heated through and slightly crispy. Set aside but keep warm.
