  • 2 pounds Ground beef (80% lean)
  • 0.5 pound Ground pork
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 cup Breadcrumbs
  • 0.5 cup Whole milk
  • 2 large Eggs
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup Ketchup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Brown sugar
  • 1 tablespoon Butter, for sautéing
  • 0.5 cup Ketchup (for glaze)
  • 1 tablespoon Worcestershire sauce (for glaze)
  • 2 tablespoons Brown sugar (for glaze)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or lightly grease it.

Step 2

Heat a skillet over medium heat and melt 1 tablespoon of butter. Add the chopped onion and cook for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, cooled onion-garlic mixture, breadcrumbs, and milk. Gently mix with your hands until combined.

Step 4

In a separate small bowl, whisk together the eggs, Worcestershire sauce, 1/4 cup ketchup, Dijon mustard, salt, black pepper, and chopped parsley. Pour the mixture into the meat mixture and gently combine. Be careful not to overmix, as this can make the meatloaf dense.

Step 5

Form the meat mixture into a loaf shape on the prepared baking sheet, or transfer it into a loaf pan, pressing it lightly to ensure it's evenly packed.

Step 6

In a small bowl, whisk together the glaze ingredients: 1/2 cup ketchup, 1 tablespoon Worcestershire sauce, and 2 tablespoons brown sugar. Brush half of the glaze over the top of the meatloaf.

Step 7

Bake the meatloaf in the preheated oven for 45 minutes. Remove it from the oven and brush the remaining glaze over the top.

Step 8

Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.

Step 9

Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute. Serve hot and enjoy!
