Ingredients

  • 2 pieces (8 oz each) Ribeye steak (or your preferred cut)

  • 1 tablespoon Olive oil
  • 1 cup Cherry tomatoes
  • 0.5 medium Red onion
  • 2 tablespoons (chopped) Fresh cilantro (or parsley)
  • 1 small Jalapeño (optional for heat)
  • 1 clove Garlic
  • 1 whole Lime
  • 1 tablespoon Extra olive oil (for salsa)

Directions

Step 1

Take the steaks out of the refrigerator and let them come to room temperature for about 20-30 minutes before cooking. This ensures even cooking.

Season each steak on both sides with salt and black pepper.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat until the oil is shimmering but not smoking.
