  • 4 pieces (6 oz each) Ribeye steak
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 medium, finely chopped Shallots
  • 2 cloves, minced Garlic
  • 1 cup Brandy or Cognac
  • 1 cup Beef broth
  • 0.5 cup Heavy cream
  • 1 tablespoon, crushed Green peppercorns

Directions

Step 1

Season the steaks with salt and black pepper on both sides. Let them sit at room temperature for about 10 minutes.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks. Depending on the thickness, cook for 3-4 minutes on each side for medium-rare or until they reach your desired doneness.

Remove the steaks from the pan and cover them with foil to rest while you prepare the sauce.
