Ingredients

  • 2 pieces Ribeye steak (or steak of your choice)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 4 tablespoons Unsalted butter
  • 3 tablespoons Parmesan cheese (grated)
  • 1 cup Balsamic vinegar
  • 2 tablespoons Honey
  • 4 cups Arugula
  • 1 tablespoon Lemon juice
  • 2 tablespoons Shaved Parmesan (for garnish)

Directions

Step 1

Remove the steaks from the refrigerator and let them come to room temperature for about 20 minutes. Season both sides generously with salt and black pepper.

Step 2

In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, then lower the heat to medium-low. Cook for about 10-12 minutes, stirring occasionally, until the glaze thickens and can coat the back of a spoon. Set aside.

Step 3

In a small bowl, mix unsalted butter with grated Parmesan cheese until well combined. Set the Parmesan butter aside.

Step 4

Heat a large skillet or cast-iron pan over high heat. Add olive oil and heat until shimmering. Place the steaks in the pan and sear for 3-4 minutes per side for medium-rare, or adjust the cooking time to your desired doneness. Remove the steaks from the pan and let them rest on a plate for about 5 minutes.

While the steaks are resting, toss the arugula with lemon juice and a small drizzle of olive oil. Divide the arugula between two plates.
