Ingredients

  • 2 pieces ribeye steaks
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 minced garlic cloves
  • 8 ounces cremini mushrooms
  • 1 teaspoon fresh thyme
  • 0.5 cup beef broth
  • 0.25 cup heavy cream

Directions

Step 1

Season both sides of the ribeye steaks with salt and black pepper. Let them rest at room temperature for 10 minutes.

Step 2

While the steaks rest, slice the cremini mushrooms and mince the garlic cloves.

Step 3

In a large skillet over medium-high heat, add 1 tablespoon of olive oil and sear the steaks for 3-4 minutes on each side for medium-rare, or until desired doneness is reached. Remove the steaks and let them rest on a plate under foil.

Step 4

In the same skillet, add the remaining olive oil and butter. Let the butter melt, then add the minced garlic and sauté for about 30 seconds until fragrant.

Step 5

Add the sliced cremini mushrooms to the skillet and sauté for 5-7 minutes, until they have released their moisture and begin to brown.

Stir in the fresh thyme and add the beef broth, scraping any browned bits from the bottom of the skillet.
