Ingredients

  • 2 steaks Ribeye steak (or steak cut of choice)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cloves Garlic cloves, smashed
  • 2 sprigs Fresh rosemary sprigs
  • 1 cup Sour cream
  • 3 tablespoons Prepared horseradish
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley, finely chopped

Directions

Step 1

Remove the steaks from the refrigerator and let them come to room temperature, about 30 minutes before cooking.

Step 2

Season both sides of each steak generously with salt and black pepper.

Step 3

Heat a large cast-iron skillet over medium-high heat and add olive oil.

Step 4

When the oil is shimmering but not smoking, place the steaks into the pan. Cook for 3-4 minutes without moving to develop a good sear.

Step 5

Flip the steaks and add the butter, smashed garlic, and rosemary sprigs to the skillet.

Step 6

Tilt the pan slightly and use a spoon to baste the butter over the steaks continuously for 3-4 minutes for medium-rare, or to your desired doneness.

Step 7

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing.

Step 8

While the steaks rest, prepare the horseradish sauce. In a bowl, combine the sour cream, prepared horseradish, lemon juice, and parsley. Mix well and season with a pinch of salt if needed.

Step 9

Serve the steaks warm with a generous dollop of horseradish sauce on the side.
