Take the steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels and season both sides with salt and black pepper.
Drain and rinse the canned garbanzo beans in cold water. Set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. When the oil is shimmering, add the steaks. Sear on one side for 3–4 minutes, until a golden-brown crust forms. Flip and cook for another 3–4 minutes for medium-rare, or adjust for your preferred doneness.
