Ingredients

  • 2 pieces Steak (ribeye, sirloin, or your choice)
  • 2 medium Red onion
  • 100 grams Feta cheese
  • 500 grams Pumpkin
  • 4 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Brown sugar
  • 2 teaspoons Fresh thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Butter
  • 2 cloves Garlic cloves

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Peel and cube the pumpkin into 2 cm pieces. Place in a bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of fresh thyme, and a pinch of salt and pepper.

Step 3

Spread the pumpkin on a baking tray lined with parchment paper and roast in the oven for 25-30 minutes, turning halfway through, until tender and golden brown.

While the pumpkin is roasting, thinly slice the red onions.

Step 5

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook for 5 minutes, stirring occasionally, until softened.

Sprinkle the brown sugar and drizzle the balsamic vinegar over the onions. Stir and cook for another 10-12 minutes, until the onions are caramelised and glossy. Remove from heat and set aside.

Add the garlic cloves (smashed but still in their skins) and the steak to the pan. Sear the steak for 3-4 minutes per side for medium-rare, or adjust the cooking time for your desired level of doneness.

Once cooked, remove the steak from the pan and rest on a plate covered with foil for 5 minutes.

To serve, slice the steak and arrange on plates. Top with caramelised red onion, crumbled feta cheese, and the roasted pumpkin.

Garnish with an extra sprinkle of fresh thyme if desired and serve immediately.
