Ingredients

  • 2 pieces Steak (ribeye, sirloin, or filet mignon)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Shallot, finely chopped
  • 1 cup Heavy cream
  • 1 cup Blue cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Remove the steaks from the fridge 30 minutes before cooking to allow them to come to room temperature.

Step 2

Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.

In a large skillet, heat olive oil over medium-high heat until shimmering.

Step 4

Add the steaks to the hot skillet and sear for 3-4 minutes on each side for medium-rare, or longer for desired doneness. Use tongs to sear the edges for 30 seconds each.
