Ingredients

  • 2 pieces (8-10 oz each) Ribeye steak
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves (minced) Garlic
  • 0.25 cup Whiskey
  • 0.5 cup Heavy cream
  • 3 tablespoons (chopped) Chives
  • 0.25 cup Beef stock
  • 0.5 teaspoon Ground mustard

Directions

Step 1

Season both sides of the ribeye steaks generously with salt and black pepper. Let them rest at room temperature for 10 minutes while you prepare the other ingredients.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Once the oil is shimmering, add the steaks to the pan.

Step 3

Sear the steaks for 3-4 minutes per side for medium-rare, or adjust the cooking time to your preferred doneness. Use tongs to hold the steak edges against the pan to sear the sides. Once cooked to your liking, remove the steaks from the skillet, tent them with foil, and let them rest.

Step 4

Lower the heat to medium and add unsalted butter to the same skillet. Stir in the minced garlic and sauté for about 30 seconds, or until fragrant.

Step 5

Carefully pour in the whiskey, scraping up the browned bits from the bottom of the pan. Let the whiskey simmer for 1-2 minutes to reduce slightly.

Step 6

Add the heavy cream, beef stock, and ground mustard to the skillet. Stir well to combine. Simmer the sauce for 2-3 minutes, allowing it to thicken slightly.

Step 7

Stir in the chopped chives and season the sauce to taste with additional salt and pepper, if needed.

Step 8

Plate the ribeye steaks and spoon the chive whiskey cream sauce generously over the top. Serve immediately with your favorite side dishes, such as mashed potatoes or roasted vegetables.
