  • 12 oz sirloin steak
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 0.5 cup fresh basil leaves, chopped
  • 0.5 tsp crushed red pepper flakes
  • 1.5 tbsp balsamic vinegar
  • 12 oz spaghetti or linguine
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup water

Directions

Step 1

Season the sirloin steak on both sides with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the steak for 3-4 minutes per side until it reaches your preferred doneness (medium-rare: 135°F, medium: 145°F). Remove the steak from the skillet, let it rest for 5 minutes, then slice thinly against the grain.

Step 3

While the steak is resting, bring a large pot of salted water to a boil. Cook the spaghetti or linguine according to package instructions until al dente. Drain, reserving 0.5 cup of pasta water.

Step 4

In the same skillet used for the steak, add the remaining 2 tablespoons of olive oil and minced garlic. Sauté for 1 minute over medium heat until fragrant.

Step 5

Fold in the sliced steak and toss gently to combine. Remove from heat and top with the remaining chopped basil and grated Parmesan cheese.
