Ingredients

  • 1 pound Steak tips
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 medium Shallots, finely chopped
  • 2 Garlic cloves, minced
  • 1 tablespoon All-purpose flour
  • 0.75 cup Red wine (dry)
  • 1 cup Beef broth
  • 1 teaspoon Fresh thyme
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the steak tips dry with paper towels and season them evenly with salt and freshly ground black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 3

Once the oil is hot, add the steak tips to the skillet in a single layer. Do not overcrowd the pan; cook in batches if necessary.

Step 4

Sear the steak tips for about 2-3 minutes per side until browned. Remove them from the skillet and set aside on a plate.

Step 5

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil and butter to the skillet.

Step 6

Add the chopped shallots and cook for 2-3 minutes until softened, stirring occasionally.

Step 7

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 8

Sprinkle the flour into the skillet and stir well to combine with the shallots and butter, cooking for 1 minute to remove the raw flour taste.

Step 9

Slowly pour in the red wine, stirring constantly to deglaze the pan and scrape up any browned bits from the bottom.

Step 10

Add the beef broth and stir well. Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the sauce to thicken slightly.

Step 11

Add the fresh thyme to the sauce and return the seared steak tips to the skillet along with any accumulated juices.

Step 12

Simmer everything together for 2-3 minutes to reheat the steak tips and marry the flavors.

Step 13

Taste the sauce and adjust seasoning with more salt and pepper if needed.

Step 14

Serve the steak tips hot, spooning the red wine sauce over the top. Garnish with fresh parsley if desired.
