  • 2 tbsp Olive oil

  • 0.5 tsp Black pepper
  • 2 Garlic cloves
  • 4 Roma tomatoes
  • 1 Jalapeño
  • 0.5 Red onion
  • 0.25 cup Cilantro
  • 2 tbsp Lime juice
  • 8 Corn tortillas
  • 0.25 cup Cotija cheese (optional)
  • 0.25 cup Sour cream or crema (optional)

Directions

Step 1

In a small bowl, mix the olive oil, ground cumin, paprika, 1 teaspoon of salt, and black pepper to create a marinade.

Rub the marinade generously over the skirt steak on all sides. Let it rest at room temperature for 15-20 minutes.

While the steak marinates, prepare the charred salsa. Heat a cast iron skillet or grill pan over high heat.
