  • 8 oz Ribeye steak
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 medium, diced Yellow onion
  • 2 minced Garlic cloves
  • 2 diced Celery stalks
  • 1 medium, diced Carrot
  • 3 tbsp, chopped Fresh parsley
  • 1 tsp, finely chopped Fresh rosemary
  • 1 tsp, finely chopped Fresh thyme
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 cup Beef stock
  • 4 cups, cubed Day-old bread
  • 0.5 cup Grated Parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

Step 3

Season the ribeye steak with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper, then sear it for 2-3 minutes per side until browned. Set aside to rest for 10 minutes, then slice it into small cubes.

In the same skillet, heat the remaining olive oil and butter over medium heat.

Add the diced onion, garlic, celery, and carrot to the skillet. Sauté for 5-7 minutes until softened and aromatic.

Mix in the parsley, rosemary, thyme, remaining salt, and pepper, and cook for an additional 1-2 minutes.

In a large mixing bowl, combine the sautéed vegetables, beef stock, cubed steak, and cubed bread. Stir well to ensure the bread absorbs the liquid.
