Ingredients

  • 1 lb beef sirloin steak
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 3 medium celery stalks, sliced
  • 4 cloves minced garlic
  • 3 medium potatoes, peeled and diced
  • 6 cups beef broth
  • 1 14.5 oz can canned diced tomatoes, undrained
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup frozen peas
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Cut the beef sirloin steak into bite-sized cubes and season lightly with salt and pepper.

Step 2

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Step 3

Add the steak cubes in batches, searing them on all sides until browned. Remove the steak from the pot and set aside.

Step 4

Lower the heat to medium, add the remaining tablespoon of olive oil, and sauté the diced onion, carrots, and celery until softened, about 5 minutes.

Add the minced garlic and cook for another minute until fragrant.

Return the seared steak to the pot along with the diced potatoes. Stir to combine.
