Ingredients

  • 1 lb Ribeye steak
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 Yellow onion
  • 4 slices Provolone cheese
  • 4 French baguette or hoagie rolls
  • 2 Garlic cloves
  • 1 cup Arugula (optional)

Directions

Step 1

Season the ribeye steak on both sides with the salt and black pepper. Let it sit while preparing other ingredients.

Step 2

Slice the onions thinly. In a skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-low heat. Add the onions and cook, stirring occasionally, until caramelized and golden brown (about 10-12 minutes). Remove the onions from the skillet and set aside.

Step 3

Heat the remaining 1 tablespoon of olive oil in the same skillet over medium-high heat. Add the steak to the hot skillet and cook for 3-4 minutes per side for medium-rare, or longer depending on your preferred doneness. Remove the steak from the skillet and let it rest for 5 minutes.

Step 4

While the steak is resting, preheat the broiler to high. Slice the baguette or hoagie rolls lengthwise and toast them lightly under the broiler for 1-2 minutes until golden brown.

Step 5

Rub the toasted bread with the garlic cloves for extra flavor.

Step 6

Thinly slice the rested steak across the grain.

Step 7

Assemble the sandwiches: on the bottom half of the bread, layer arugula (if using), steak slices, caramelized onions, and provolone cheese. Place the sandwiches back under the broiler for 1-2 minutes, just until the cheese melts.

Step 8

Top with the other half of the bread and serve the steak sandwiches warm.
