Ingredients

  • 1 lb ribeye steak
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 4 pieces French baguette or ciabatta rolls
  • 1 large yellow onion
  • 1 tbsp unsalted butter
  • 4 tbsp mayonnaise
  • 1 cup arugula
  • 4 pieces cheese slices (provolone or Swiss)
  • 1 tsp garlic powder

Directions

Step 1

Take the ribeye steak out of the fridge 30 minutes before cooking to bring it to room temperature.

Step 2

Rub the steak with 1 tablespoon of olive oil and season both sides with salt, black pepper, garlic powder, and paprika.

Step 3

Heat a cast-iron skillet over medium-high heat until very hot. Add 1 tablespoon of olive oil to the skillet.

Sear the steak for 3-4 minutes on each side for medium-rare, or longer depending on your preferred level of doneness.
