Ingredients

  • 4 pieces Steak (ribeye, filet mignon, or sirloin)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 small, finely chopped Shallot
  • 1 cup Dry white wine
  • 1 cup Heavy cream
  • 100 grams Roquefort cheese
  • 2 tablespoons, chopped Fresh parsley (for garnish)

Directions

Step 1

Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to come to room temperature.

Step 2

Season both sides of the steaks with salt and black pepper.

Step 3

Heat a large skillet over medium-high heat and add the olive oil.

Step 4

Sear the steaks for 3-5 minutes per side (depending on desired doneness, e.g., medium-rare or medium). Once cooked to preferred doneness, remove the steaks and set them aside on a plate, tented with foil to keep warm.

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the finely chopped shallot and cook until softened, about 2 minutes.
