Ingredients

  • 1 pound skirt steak
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large bell pepper, sliced
  • 1 medium onion, sliced
  • 4 large flour tortillas
  • 2 cups Mexican blend cheese, shredded
  • 1 cup sour cream
  • 1 cup salsa

Directions

Step 1

Trim excess fat from the skirt steak and season both sides with salt, black pepper, garlic powder, and onion powder.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 3

Add the steak to the skillet and cook for about 4-5 minutes on each side or until the desired level of doneness is reached. Remove from the skillet and let rest for 5 minutes before slicing into thin strips.

In the same skillet, add the remaining tablespoon of olive oil and sauté the sliced bell pepper and onion. Cook until soft and slightly caramelized, about 5-7 minutes. Remove from heat and set aside.
