  • 2 pieces (6-8 ounces each) ribeye or sirloin steak
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 4 cloves, minced garlic cloves
  • 0.5 teaspoons (optional) crushed red pepper flakes
  • 1 can (28 ounces) canned crushed tomatoes
  • 1 teaspoon dried oregano
  • 8 leaves, torn fresh basil leaves
  • 0.5 cups (optional) red wine
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Season the steaks on both sides with kosher salt and black pepper. Set them aside to come to room temperature while you prepare the sauce.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, sear the steaks for 2-3 minutes per side, until deep golden brown but not fully cooked. Remove the steaks from the skillet and set them aside on a plate.

Step 3

Add the remaining tablespoon of olive oil to the same skillet. Lower the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant but not browned. If you like some spice, stir in the crushed red pepper flakes.
