Ingredients

  • 1 lbs Flank steak
  • 4 cups Fresh spinach
  • 6 slices Bacon
  • 2 Garlic cloves (minced)
  • 1 cup Shredded mozzarella cheese
  • 0.25 cup Grated parmesan cheese
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 12 Toothpicks or kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Place the flank steak on a cutting board. Butterfly the steak by slicing it horizontally, being careful not to cut all the way through, and open it like a book. Use a meat mallet to pound the steak evenly to about 1/2-inch thickness.

Step 3

Season both sides of the steak with salt, black pepper, and paprika, then set aside.

Step 4

In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and place it on a paper towel-lined plate to drain, reserving about 1 tablespoon of bacon grease in the skillet.

Step 5

Add olive oil to the skillet with the reserved bacon grease. Sauté the minced garlic until fragrant, about 30 seconds.

Step 6

Add the fresh spinach to the skillet and cook until wilted, about 3–4 minutes. Remove the skillet from heat, crumble the cooked bacon over the spinach, and stir to combine. Allow the mixture to cool slightly.

Step 7

Spread the spinach and bacon mixture evenly over the steak. Sprinkle the mozzarella cheese and parmesan cheese on top.

Step 8

Carefully roll the steak tightly from one short end to the other, like a jelly roll, keeping the filling inside.

Step 9

Secure the rolled steak with toothpicks or kitchen twine at 1-inch intervals, then slice the roll into 1-inch thick pinwheels.

Step 10

Heat an oven-safe skillet over medium-high heat. Sear the steak pinwheels for 2–3 minutes on each side until browned.

Step 11

Transfer the skillet to the preheated oven and bake for 12–15 minutes, or until the internal temperature of the steak reaches your desired doneness (135°F for medium-rare).

Step 12

Remove the skillet from the oven and let the pinwheels rest for 5 minutes before serving.

Step 13

Serve the steak pinwheels hot, garnished with additional parmesan cheese or fresh chopped parsley, if desired.
