Ingredients

  • 1 lb beef sirloin or flank steak
  • 2 tbsp olive oil
  • 1 medium (diced) white onion
  • 1 medium (diced) green bell pepper
  • 1 medium (diced) red bell pepper
  • 1 medium (seeded and minced) jalapeño pepper
  • 3 (minced) garlic cloves
  • 14.5 oz (canned, with juices) diced tomatoes
  • 8 oz tomato sauce
  • 1 cup water or beef broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp (dried) oregano
  • 1 tsp (or to taste) salt
  • 0.5 tsp (or to taste) black pepper
  • 2 tbsp (chopped, for garnish) cilantro

Directions

Step 1

Slice the beef into thin strips or bite-sized pieces.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion, green and red bell peppers, and jalapeño. Sauté for 5 minutes, or until the vegetables soften.

Step 4

Stir in the minced garlic and cook for 1 additional minute until fragrant.

Step 5

Add the diced tomatoes (with their juices), tomato sauce, and water or beef broth to the skillet. Stir well to combine.

Step 6

Season the mixture with ground cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Stir to evenly distribute the seasonings.

Step 7

Return the cooked beef to the skillet. Reduce the heat to low, cover the skillet, and simmer for 30 minutes, stirring occasionally.

Step 8

Taste and adjust seasoning with additional salt or spices, if needed.

Step 9

Serve hot, topped with freshly chopped cilantro. Pair with warm tortillas, rice, or beans for a complete meal.
