Ingredients

  • 2 pieces (8 oz each) sirloin steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large (sliced thinly) yellow onion
  • 2 cloves (minced) garlic
  • 2 medium (sliced into wedges) tomato
  • 1 cup beef broth
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon soy sauce
  • 1 tablespoon (chopped, for garnish) fresh parsley

Directions

Step 1

Season both sides of the steak with salt and black pepper. Set aside at room temperature for 10 minutes.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steaks and cook for 3-4 minutes per side for medium-rare or until your desired doneness. Remove steaks from the skillet, tent with foil, and let them rest.

Step 3

In the same skillet, add the remaining tablespoon of olive oil and reduce the heat to medium. Add the sliced onion and cook for about 5-7 minutes until soft and caramelized.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds, ensuring it does not burn.

Step 5

Add the tomato wedges to the skillet and cook for 2-3 minutes, allowing them to soften slightly but not lose their shape. Remove the onions and tomatoes from the skillet and set aside.

Step 6

In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute, stirring constantly, to create a roux.

Step 7

Slowly pour in the beef broth while whisking to ensure no lumps form. Simmer for 3-4 minutes until the gravy thickens.

Step 8

Stir in the soy sauce for added depth of flavor. Taste the gravy and season with additional salt and pepper if needed.

Step 9

Return the onions and tomatoes to the skillet, stirring to coat them in the gravy.

Step 10

Serve the rested steaks on plates, topped with the onion-tomato-gravy mixture. Garnish with fresh chopped parsley before serving.
