Thinly slice the yellow onion. Set aside.
Season the flank steak on both sides with salt, black pepper, garlic powder, and chili powder. Let it rest at room temperature for 10 minutes.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, for 10-12 minutes until caramelized. Remove onions from the skillet and set aside.
Increase the heat to medium-high and add the remaining 1 tablespoon of olive oil to the same skillet. Sear the flank steak for 3-4 minutes on each side, or until it reaches your desired level of doneness. Remove the steak from the skillet and let it rest for 5 minutes before slicing it thinly against the grain.
Lay out the flour tortillas. On one half of each tortilla, sprinkle a layer of shredded Monterey Jack cheese, followed by a layer of caramelized onions and sliced steak. Top with another layer of cheese and fold the tortilla in half.
Heat a clean skillet or griddle over medium heat. Add 1/2 tablespoon of butter and swirl it around to coat the pan. Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more butter as needed.
Cut each quesadilla into wedges and serve with sour cream and chopped fresh cilantro as garnish.
