Ingredients

  • 1 lb Flank steak
  • 1 large Yellow onion
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 4 Large flour tortillas
  • 2 cups Shredded Monterey Jack cheese
  • 2 tbsp Butter
  • 0.5 cup Sour cream
  • 2 tbsp Fresh cilantro

Directions

Step 1

Thinly slice the yellow onion. Set aside.

Step 2

Season the flank steak on both sides with salt, black pepper, garlic powder, and chili powder. Let it rest at room temperature for 10 minutes.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, for 10-12 minutes until caramelized. Remove onions from the skillet and set aside.

Step 4

Increase the heat to medium-high and add the remaining 1 tablespoon of olive oil to the same skillet. Sear the flank steak for 3-4 minutes on each side, or until it reaches your desired level of doneness. Remove the steak from the skillet and let it rest for 5 minutes before slicing it thinly against the grain.

Lay out the flour tortillas. On one half of each tortilla, sprinkle a layer of shredded Monterey Jack cheese, followed by a layer of caramelized onions and sliced steak. Top with another layer of cheese and fold the tortilla in half.

Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more butter as needed.
