Ingredients

  • 1 lb ground beef
  • 1 onion, finely diced
  • 0.5 green bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp cocoa powder
  • 0.25 tsp cayenne pepper (optional)
  • 14.5 oz canned diced tomatoes
  • 15 oz canned kidney beans, drained and rinsed
  • 15 oz canned chili beans in sauce
  • 8 oz tomato sauce
  • 1 cup beef broth
  • 1 tsp white vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

In a large pot or Dutch oven, heat a drizzle of oil over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it into crumbles with a spatula, about 5-7 minutes. Drain excess grease if necessary.

Step 3

Add the diced onion, green bell pepper, and minced garlic to the pot. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Stir in the chili powder, ground cumin, paprika, cocoa powder, and cayenne pepper (if using). Cook for 1-2 minutes until fragrant.

Step 5

Add the canned diced tomatoes, kidney beans, chili beans, tomato sauce, and beef broth. Stir well to combine.

Step 6

Add the white vinegar, sugar, salt, and black pepper. Mix thoroughly.

Step 7

Bring the chili to a simmer, then reduce the heat to low. Cover the pot with a lid and let it cook gently for 45-60 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning with additional salt or spices as needed.

Step 9

Serve the chili hot, garnished with shredded cheddar cheese, diced onions, or a dollop of sour cream, if desired. Pair with crackers or toasted bread for the perfect meal!
