Ingredients

  • 2 pieces steak (ribeye, sirloin, or filet mignon)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 pieces garlic cloves, minced
  • 1 cup dry red wine
  • 0.5 cup beef stock
  • 1 sprig fresh rosemary (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Take the steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature.

Step 2

Season both sides of the steaks with salt and black pepper.

Step 3

Heat a large skillet over medium-high heat and add the olive oil.

When the oil is shimmering, place the steaks in the skillet and sear for 3-4 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer if necessary – 130°F (54°C) for medium-rare or 140°F (60°C) for medium.

Remove the steaks from the skillet and place them on a plate to rest. Tent the plate with aluminum foil to keep them warm.

Lower the heat to medium and add the butter to the same skillet.

Once the butter has melted, add the minced garlic and sauté for 30 seconds, stirring constantly to prevent burning.
