Take the steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature.
Season both sides of the steaks with salt and black pepper.
Heat a large skillet over medium-high heat and add the olive oil.
When the oil is shimmering, place the steaks in the skillet and sear for 3-4 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer if necessary – 130°F (54°C) for medium-rare or 140°F (60°C) for medium.
Remove the steaks from the skillet and place them on a plate to rest. Tent the plate with aluminum foil to keep them warm.
Lower the heat to medium and add the butter to the same skillet.
Once the butter has melted, add the minced garlic and sauté for 30 seconds, stirring constantly to prevent burning.
Pour in the red wine and scrape the bottom of the skillet with a wooden spoon to deglaze the pan and release the browned bits.
Add the beef stock and rosemary (if using), and let the sauce simmer for 5-7 minutes until it has reduced by about half and thickened slightly.
Remove the rosemary sprig (if used) and taste the sauce. Adjust seasoning with salt and pepper if necessary.
Return the steaks to the skillet along with any juices from the resting plate. Spoon the sauce over the steaks and allow them to warm for 1-2 minutes.
Transfer the steaks to serving plates, pour the remaining sauce over them, and garnish with chopped parsley.
Serve immediately with your favorite sides, such as roasted vegetables or mashed potatoes.
