Ingredients

  • 1 lb Flank steak
  • 3 tbsp Lime juice
  • 2 tbsp Olive oil

  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 1 Red onion, sliced
  • 6 Tortillas (flour or corn)
  • 1 Mango, diced
  • 0.25 Red onion, finely diced
  • 1 Jalapeño, seeded and minced
  • 2 tbsp Fresh cilantro, chopped
  • 1 tbsp Lime juice
  • 0.25 tsp Salt

Directions

Step 1

In a large bowl, combine 3 tablespoons lime juice, 2 tablespoons olive oil, minced garlic, chili powder, ground cumin, paprika, 1 teaspoon salt, and black pepper.

Step 2

Place the flank steak in the marinade, turning to coat evenly. Cover and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.

Step 3

While the steak is marinating, prepare the mango salsa. In a bowl, combine the diced mango, finely diced red onion, minced jalapeño, chopped cilantro, 1 tablespoon lime juice, and 1/4 teaspoon salt. Mix well and set aside.
