Ingredients

  • 1 lb Skirt steak
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 large Yellow bell pepper
  • 1 large Red onion
  • 3 tbsp Olive oil
  • 3 tbsp Lime juice
  • 3 cloves Garlic cloves, minced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped
  • 12 skewers Wooden skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning while grilling.

Step 2

Trim any excess fat from the skirt steak, then cut the steak into cubes approximately 1 to 1.5 inches in size.

Step 3

Core and seed the red, green, and yellow bell peppers, then cut them into 1.5-inch squares. Peel the red onion and cut it into similar-sized chunks.

Step 4

In a large bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, paprika, chili powder, salt, and black pepper to make the marinade.

Step 5

Add the steak cubes to the bowl with the marinade, tossing to coat evenly. Cover and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to meld.

Step 6

Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high and lightly oil the surface.

Step 7

Assemble the skewers: alternate pieces of steak, bell peppers, and red onion to create colorful and balanced skewers. Repeat until all ingredients are used.

Step 8

Place skewers on the hot grill and cook for 3-4 minutes per side, rotating to achieve even grilling and a slight char. Cook to your desired doneness (medium-rare is 135°F, medium is 145°F).

Step 9

Remove the skewers from the grill and let them rest for 5 minutes. Sprinkle with freshly chopped cilantro before serving.

Step 10

Serve hot, with optional sides such as warm tortillas, sour cream, guacamole, or salsa for dipping.
