Ingredients

  • 4 pieces beef steaks (sirloin, chuck, or round)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large yellow onion, sliced
  • 4 medium Russet potatoes, peeled and cut into chunks
  • 4 medium carrots, peeled and cut into large pieces
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season both sides of the steaks with salt, black pepper, garlic powder, and onion powder.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Sear the steaks for 1-2 minutes on each side until browned. This step adds flavor, but you can skip it if short on time.

Step 3

Place the sliced onion evenly at the bottom of the crock pot. Layer the browned steaks on top of the onion.

Step 4

Add the potato chunks and carrot pieces around and on top of the steaks in the crock pot.

Step 5

In a small bowl, whisk together the beef broth and Worcestershire sauce. Pour the mixture over the steaks and vegetables.

Step 6

Cover the crock pot with the lid and cook on low heat for 6-8 hours or until the steak is tender and the vegetables are cooked through.

Step 7

About 30 minutes before serving, make the cornstarch slurry by mixing the cornstarch with 2 tablespoons of water until smooth. Stir the slurry into the crock pot to thicken the cooking liquid into a gravy. Let it cook for an additional 30 minutes.

Step 8

Once done, taste and adjust seasonings if necessary. Serve the steak and vegetables warm, spooning the gravy over the top.

Step 9

Garnish with chopped fresh parsley if desired and enjoy your crock pot steak dinner!
