Ingredients

  • 2 pieces (10 oz each) ribeye steak
  • 1 cup dry red wine
  • 3 tablespoons olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 3 cloves, minced garlic
  • 8 ounces, sliced button mushrooms
  • 2 tablespoons balsamic vinegar
  • 1 cup beef stock
  • 2 tablespoons butter
  • 1 teaspoon (or to taste) salt
  • 1 teaspoon (or to taste) black pepper

Directions

Step 1

In a medium bowl, mix the red wine, 2 tablespoons of olive oil, rosemary, thyme, minced garlic, and a pinch of salt and pepper to create the marinade.

Step 2

Place the ribeye steaks in a large resealable plastic bag or dish and pour the marinade over them. Seal and refrigerate for at least 1 hour or up to 8 hours for maximum flavor.

Step 3

Remove the steaks from the marinade and pat them dry with paper towels. Discard the marinade.

Step 4

Heat a large skillet or grill pan over medium-high heat. Add the remaining 1 tablespoon of olive oil.

Step 5

Season the steaks on both sides with salt and pepper, and sear them for 3-4 minutes per side for medium-rare, or adjust according to your preferred doneness. Transfer the cooked steaks to a plate, tent with aluminum foil, and let rest.

Step 6

In the same skillet, melt the butter over medium heat. Add the mushrooms and cook for 5-7 minutes until tender and golden brown.

Step 7

Deglaze the pan by adding the balsamic vinegar, scraping up any browned bits, and cook for 1 minute.

Step 8

Pour in the beef stock and let the sauce simmer for 3-4 minutes until slightly thickened.

Step 9

Serve the rested steaks topped with the mushroom and balsamic glaze. Garnish with a sprig of rosemary if desired, and enjoy!
