  • 1.5 lbs beef sirloin steak

  • 28 oz canned diced tomatoes
  • 15 oz, drained and rinsed canned kidney beans
  • 15 oz, drained and rinsed canned black beans
  • 3 tbsp fajita seasoning
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup, chopped (optional) fresh cilantro
  • 0.5 cup (optional, for serving) sour cream
  • 1 cup (optional, for serving) shredded cheddar cheese

Directions

Step 1

Trim any excess fat off the beef sirloin steak and cut it into bite-sized cubes.

Step 2

In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the steak pieces in batches to avoid overcrowding and sear for 2-3 minutes per side until browned. Remove the steak from the pot and set it aside.

Step 3

Reduce the heat to medium and add the remaining 1 tablespoon of olive oil to the pot. Add the diced onion and bell peppers, and sauté for 5-7 minutes, stirring occasionally, until softened.
