Ingredients

  • 1 lb steak (sirloin or chuck recommended)
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp ground paprika
  • 4 pieces burger buns
  • 4 slices cheddar cheese slices (optional)
  • 4 pieces lettuce leaves
  • 4 slices tomato slices
  • 8 pieces pickle slices
  • 4 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tbsp olive oil or vegetable oil

Directions

Step 1

Slice the steak into smaller chunks, removing any large pieces of fat or gristle.

Step 2

Using a food processor, grind the steak in small batches until it reaches a coarse, ground consistency. Do not overprocess.

Step 3

Transfer the ground steak into a large bowl. Add the kosher salt, black pepper, garlic powder, onion powder, and paprika. Mix gently with your hands until the seasonings are evenly distributed, being careful not to overmix.

Step 4

Divide the mixture into four equal portions. Gently form each portion into a burger patty, about ¾ inch thick. Use your thumb to make a small indentation in the center of each patty to prevent puffing during cooking.

Step 5

Preheat a grill, grill pan, or skillet over medium-high heat. Lightly oil the grill grates or pan with olive oil.

Step 6

Cook the burger patties for 3-4 minutes on the first side. Flip and continue cooking for another 3-4 minutes for medium, or adjust the time based on your preferred doneness.

Step 7

During the last minute of cooking, place a slice of cheddar cheese on each patty to melt (optional).

Step 8

While the patties cook, toast the burger buns on the grill or in a toaster until golden brown.

Step 9

Assemble the burgers by spreading 1 tablespoon of mayonnaise on the bottom bun of each burger. Add a lettuce leaf, a cooked patty, a tomato slice, and 2 pickle slices. Spread ketchup and a small amount of mustard on the top bun, then place it over the assembly.

Step 10

Serve the steak burgers immediately with your favorite sides, such as fries or a fresh salad.
