Ingredients

  • 400 grams Flank steak
  • 3 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 200 grams Mixed greens
  • 1 large Avocado, sliced
  • 150 grams Cherry tomatoes, halved
  • 1 cup Black beans, rinsed and drained
  • 0.25 cup Cilantro, chopped
  • 2 tablespoons Lime juice
  • 1 teaspoon Honey
  • 0.5 teaspoon Ground cumin

Directions

Step 1

Season the flank steak with 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Let it marinate for at least 10 minutes at room temperature.

Step 2

Heat a skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil and sear the steak for 3-4 minutes per side for medium-rare or until your desired doneness. Remove the steak and let it rest for 5 minutes before slicing it thinly against the grain.

Step 3

In a small bowl, whisk together the lime juice, honey, ground cumin, and 1 tablespoon of olive oil to create the dressing. Set aside.

Step 4

In a large salad bowl, combine the mixed greens, sliced avocado, cherry tomatoes, black beans, and chopped cilantro.

Step 5

Drizzle the lime dressing over the salad and toss gently to combine.

Step 6

Top the salad with the sliced steak. Optionally, garnish with extra cilantro or a sprinkle of black pepper.

Step 7

Serve immediately and enjoy your Steak Avocado Bean Salad.
