  • 0.25 cup bourbon
  • 0.5 cup beef stock
  • 0.33 cup heavy cream
  • 1 teaspoon fresh thyme leaves

Directions

Step 1

Take the filet mignon steaks out of the refrigerator 30 minutes before cooking to allow them to come to room temperature. Pat them dry with paper towels.

Step 2

Spread the coarsely crushed black peppercorns and kosher salt on a plate. Press both sides of each steak into the mixture, coating them evenly.

Step 3

Heat 1 tablespoon of butter and the olive oil in a heavy skillet over medium-high heat until hot but not smoking.

Add the steaks to the skillet and sear for 3-4 minutes on each side for medium-rare, or adjust the cooking time to your preferred level of doneness. Remove the steaks from the skillet, tent them with foil, and let them rest.
