Ingredients

  • 2 pieces ribeye steak (or your preferred cut)
  • 2 medium-sized yellow onion
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic cloves
  • 2 sprigs fresh rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Take the steaks out of the refrigerator and let them come to room temperature while preparing the other ingredients (about 20-30 minutes).

Step 2

Peel and thinly slice the onions into even rings to ensure they cook evenly.

Step 3

Mince the garlic cloves.

Step 4

Season the steaks generously on both sides with salt and black pepper.

Step 5

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 6

Add the sliced onions to the skillet and cook them for 10-12 minutes, stirring occasionally, until they are soft and caramelized. Remove the caramelized onions from the skillet and set them aside.

Step 7

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.

Step 8

Add the steaks to the skillet and sear them for 3-4 minutes on each side for medium-rare (adjust the cooking time according to your preferred level of doneness).

Step 9

During the last 2 minutes of cooking, add the remaining butter, minced garlic, and fresh rosemary to the skillet. Spoon the melted butter mixture over the steaks to infuse them with extra flavor.

Step 10

Remove the steaks from the skillet and let them rest on a plate for 5 minutes to retain their juices.

Step 11

Reheat the caramelized onions in the skillet for 1-2 minutes if needed.

Step 12

Serve the steaks topped with the warm caramelized onions. Enjoy!
