Ingredients

  • 1 lb sirloin steak
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups canned navy beans, drained and rinsed
  • 1 cup diced tomatoes, drained
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the sirloin steak on both sides with salt and black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 3

Sear the steak in the skillet for 2-3 minutes on each side until browned. Remove the steak from the pan and set it aside to rest. Once cooled slightly, slice it into thin strips.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the diced onion for 3-4 minutes until softened, then add the minced garlic and cook for another minute until fragrant.

Step 5

Stir in the tomato paste, smoked paprika, and dried thyme, and cook for 1-2 minutes to bring out the flavors.

Step 6

Add the navy beans, diced tomatoes, beef broth, and Worcestershire sauce to the skillet. Mix well and bring the mixture to a gentle simmer.

Step 7

Transfer the bean mixture into a 9x13-inch casserole dish. Layer the sliced steak on top of the mixture.

Step 8

Sprinkle the grated Parmesan cheese evenly over the casserole.

Step 9

Cover the casserole dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 10

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbling.

Step 11

Garnish the casserole with freshly chopped parsley before serving.

Step 12

Serve warm and enjoy your hearty Steak and Navy Bean Casserole!
