Start by preparing the secret sauce. In a small bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, paprika, and honey until smooth. Set aside.
Season the thinly sliced ribeye steak with salt and black pepper on both sides.
Heat a skillet over medium-high heat and add the olive oil. Once the oil is hot, sear the steak slices for 2-3 minutes per side until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
Preheat a panini press or a grill pan over medium heat.
