Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef stewing steak, cut into 1-inch cubes

  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1.5 cups Guinness beer
  • 1 cup beef stock
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 1 cup mushrooms, roughly chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 sheet ready-made puff pastry
  • 1 egg, beaten

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Heat a large ovenproof pot over medium heat and add the olive oil.

Step 3

Dust the beef cubes with flour, shaking off any excess, and sear in the pot until browned on all sides. Remove and set aside.

Step 4

In the same pot, add the onion, carrots, celery, and garlic. Cook for about 5 minutes, stirring occasionally, until softened.

Return the beef to the pot, and pour in the Guinness beer and beef stock.

Add the thyme, bay leaf, and mushrooms. Season with salt and pepper.
