Ingredients

  • 16 ounces Baby Bella mushrooms
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 0.5 Yellow onion
  • 2 Garlic cloves
  • 0.5 cups Dark ale (or stout beer)
  • 1 teaspoon Steak seasoning blend
  • 1 teaspoon Fresh thyme leaves
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 1 tablespoon Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Clean the Baby Bella mushrooms with a damp paper towel and slice them into 1/4-inch thick pieces.

Step 2

Finely dice the yellow onion and mince the garlic cloves.

Step 3

In a large skillet, melt the butter and olive oil over medium heat until the butter is fully melted and bubbling.

Step 4

Add the diced onion to the skillet and sauté for 3-4 minutes until softened and translucent.

Step 5

Stir in the minced garlic and cook for an additional 1 minute, stirring constantly to avoid burning.

Step 6

Add the sliced mushrooms to the skillet and toss to coat them in the butter and oil mixture. Spread them into a single layer and cook undisturbed for 4-5 minutes until they begin to brown.

Step 7

Sprinkle the steak seasoning, thyme leaves, salt, and black pepper over the mushrooms. Stir to evenly distribute the seasonings.

Step 8

Pour the ale into the skillet, scraping the bottom of the pan to deglaze it and incorporate any browned bits. Bring the liquid to a gentle simmer.

Step 9

Cook the mushrooms in the ale, stirring occasionally, for about 8-10 minutes, or until most of the liquid has evaporated and the mushrooms are tender and flavorful.

Step 10

Taste and adjust seasoning with additional salt or pepper if needed.

Step 11

Transfer the mushrooms to a serving dish and optionally garnish with chopped fresh parsley before serving.

Step 12

Serve warm as a topping for steaks, burgers, or baked potatoes, or enjoy as a side dish.
